Dinner tonight was 🔥🤤 ALSO HI! name change, but it’s still me! Anyway, this dinner was simple and fast but so very delicious. For this ONE POT PASTA I used one box of elbow shaped lentil pasta, 3 c filtered water, 1 can coconut milk, about 3-4 T tomato paste (I get mine in a tube because there is no citric acid!), sea salt, pepper, Italian herbs and spices. Cooked on medium low heat and once the pasta Was cooked, I added a boat load of roasted garlic broccoli and topped with micro green mix. You could cool the broccoli in here and just add more coconut milk, too. I just already had some roasted and I much prefer the texture and flavor doing it this way! Friday night nachos for dinner and movie/game night 👏🏼👏🏼 we top with oven roasted black beans (tossed with cumin, sea salt and garlic), walnut “meat” (chopped up walnuts roasted with cauli rice cumin paprika sea salt and pepper at 400 for about 15 minutes), nacho sauce (1 c cashews soaked in 2 c water, 2 large steamed carrots, sea salt and mustard seed powder toss all in blender including water from cashews and blend until smooth. Add mustard seed and sea salt as you like.), cilantro, salsa, avocado, plantains, and radish. They are soooooo good! #naturallychelsrecipe #chelsbateseats
