For all of you plant based eaters, or just those who don’t eat eggs, honestly anyone who like delicious foods, this. is. for. you. It’s pure amazing ness.

My husband and son can’t eat eggs without some major belly and digestion issues. I bake with them sometimes but don’t make them on their own because of this. So finding an alternative that was similar was something I really wanted to do because both of our kids love eggs so much!

These are a GREAT alternative and make a delicious quiche like texture with amazing flavor!!!

1 c garbanzo bean flour

1 c packed spinach

5 whole mushrooms

3/4 c almond milk

1 tsp pink salt

1 tsp turmeric

1 tsp ACV

3 garlic cloves

Large pinch black pepper

In a food processor, chop up the mushrooms and spinach into tiny pieces. Set aside in another bowl. Add the remaining ingredients to the food processor and mix well. Pour this mixture into the bowl with the veggies and mix together.

Line a pie dish with parchment paper and pour the mixture in. Bake at 350 for 50 minutes. Store any leftovers in an airtight container in the fridge!
