Herb Rice Quinoa and Almond “Unstuffing”

For someone who doesn’t eat meat, gluten, dairy, and tries to eat as clean as possible, Thanksgiving can seem daunting. Not to mention the fact that I simply don’t even like most of the traditional Thanksgiving dishes. As a kid, I ate mashed potatoes, cheese ball and crackers, and the homemade pumpkin pie I would make. That was it.

Last year, my family was still eating gluten so I made organic stuffing. But this year, my kids have been gluten free too (for the mere fact that cutting it out completely regulated their digestive systems) so I knew I needed to come up with something different. Also for the fact that almost all of the other guests coming don’t love stuffing either…

Then I saw somewhere about “unstuffing”… I was intrigued and inspired to make something that would semi resemble stuffing while being gluten-free, dairy-free, simple, easy, and clean! I hope you guys love this side dish as much as we do. My kids ate bowl after bowl and the whole batch was gone after 1 1/2 days! So they were definitely a big hit!

Herb Rice Quinoa and Almond Unstuffing

When you are gluten free, or just plain don't like stuffing, this is the perfect holiday dish for you! Really, it's so delicious you will want to serve it either way though!

  • 1 c cooked brown rice cook in bone broth, with sea salt and coconut oil
  • 2 c cooked quiona cook in bone broth, with sea salt and coconut oil
  • 1/2 c almond slivers
  • 1 T coconut oil, softed
  • 1/2 tsp sea salt
  • pinch black pepper
  • 1/2 tsp herbs de provence spice blend
  • 1/2 tsp fresh rosemary
  • 1/2 tsp fresh thyme


  1. Mix together in a bowl and serve warm!
