Chocolate Glazed Pumpkin Donuts

Back when I lived off pastry, one of my favorites was donuts. Over the years, as my eating habits and relationship with food changed and evolved, I would still eat a donut every now and then. But when I started working hard to heal my hormones almost two years ago, I had to cut out wheat and sugar which is basically, well, a donut.

Or so I thought.

These delicious baked donuts are grain free, refined sugar free, dairy free, plant based, and completely and utterly DELICIOUS! They have satisfied any and all desire for donuts that I can eat without my whole body getting really angry with me…. I hope you guys love these as much as my family does!

Pumpkin Chocolate Glazed Donuts

Easy baked pumpkin donuts with 10 delicious ingredients!

Ingredients

  • 1/2 c pumpkin puree
  • 1 egg
  • 1/3 c maple syrup
  • 1 c almond flour
  • 1/4 c tapioca flour
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1 tsp pumpkin spice blend
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract

Chocolate Glaze:

  • 1/2 c dark chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Mix all ingredients in a stand mixer until it's a smooth batter. 

  2. Pour into lightly oiled silicone donut pans. 

  3. Bake at 350 F for 25 minutes. 

  4. Cool completely before removing from the pans. 

  5. Melt chocolate and coconut oil together in a sauce pan and drizzle, spread, or dip donuts in! 

  6. Sprinkle pumpkin seeds and let the chocolate coating cool before serving! 

  7. Store in fridge.
