It is so rare that I want any potato that isn’t a sweet potato these days, but as a teenager I think I managed to survive 60% of the time off of potatoes… man, have times changed! And by times, I mean my eating habits.
These chili spiced cheese fries are so delicious and the perfect side for my veggies burgers (recipe in my meal prep guide) which is how I served them. It was so delicious! I love cutting my fries into thick wedges, but you could do them smaller to reduce cooking time and they would still be frickin delightful!
Vegan Chili Spices Cheese Fries
A delicious vegan alternative to the classic comfort food: cheese fries!
- 1/2 c cashews soaked and drained
- 1 tsp juiced lemon
- 1 Tbsp nutritional yeast
- sea salt and pepper to taste
- 5 small russet potatoes
- 1 tsp chili powder
- 1 Tbsp avocado oil
- everything but the bagel seasoning
preheat oven to 400 degrees.
chop the potatoes into thick wedges.
toss in a bowl with spices and oil.
spread on baking sheet and bake about 50 minutes, depending on thickness of potatoes, flipping halfway.
while potatoes are baking, make the cheese sauce. add everything to your high speed blender or food processor and blend on high until smooth and creamy.
when fries are done, drizzle or dip into cheese sauce and enjoy!
