Pumpkin Bread

Are you over the pumpkin overload yet? No? Good, me either! I mean, honestly who could get sick of pumpkin…. seriously it’s the best. And this pumpkin bread makes me love it even more. I feel like there is so much more pumpkin recipes I want to to do, so hopefully you guys are loving this as much as I am!

But this bread, you guys… it’s the best healthy version of all the popular and delicious pumpkin breads out there. It’s fluffy, soft, and perfectly pumpkin spiced. With the chocolate and seeds on top, it adds just the right amount of extra-ness. You get the picture. Basically this basic (yet not really basic at all…) autumn favorite is a must-have! Pumpkin Bread

The best pumpkin bread you'll have this season! A healthier version of the popular treat, that is grain free, dairy free, and refined sugar free! It's moist, fluffy, and so good you'll want the whole loaf.

Ingredients

Dry Ingredients

  • 2 c almond flour
  • 1/2 c tapioca flour
  • 2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 tsp pumpkin spice
  • 2 tsp cinnamon

Wet Ingredients

  • 1 c pumpkin puree
  • 2 eggs
  • 1/3 c maple syrup

Add ins

  • 1/4 c dark chocolate chips
  • 1/4 c pepitas

Instructions

  1. Preheat oven to 350

  2. In a stand mixer, or large mixing bowl, mix together all dry ingredients. 

  3. Add in all wet and mix well to form a batter.

  4. Pour into a parchment paper lined loaf pan, and top with chocolate and pepitas. 

  5. Bake for 50 minutes, until a toothpick comes out clean.
