Healthy Rice Crispy Treats

If you have been following along here for awhile, you probably know how much I love to recreate food favorites into healthier versions. When I found this One Degree brand rice crisp cereal, my first thought was that I needed to use it to create a healthier rice crispy treat! I used to eat rice crispy treats slathered with peanut butter everyday in high school. Seriously. Every. Day. I don’t think I have had one since then though, until these beauties, of course.

But that inspired me to add nut butter INTO the rice crispy treats. And let me tell you how genius that idea was! Fricking incredible. I believe my husbands exact words were “these are life changing!” So pretty much they are going to be your favorite, and you are welcome 🙂

RICE CRISPY BARS

A delicious, healthier version of the classic favorite rice crispy treat- with a twist! 

Course Dessert
Keyword dessert, grain free, sugar-free
Prep Time 10 minutes

Ingredients

  • 2 c rice crisps
  • 1/4 c honey I always use raw and local
  • 1/4 c almond butter
  • 4 Tbsp melted coconut oil
  • Pinch of pink salt

Instructions

  1. Mix coconut oil, honey, salt and almond butter together well, add in rice crisps and use a silicone spatula to gently mix.

  2. Speed onto parchment paper in a square or circle and put in the fridge for a few hours before cutting. 

  3. Keep them refrigerated so they don't melt!
