Chicory Root PSL

If you have ever heard me crying over on Instagram about how much I love coffee but how much I can’t have it without my hormones going WILDY MAD (thanks PCOS symptoms… eye rolls for days), then basically you understand how much I miss coffee. Oh my beloved coffee. It’s one of my favorite things, so I have it on rare occasion and it’s always worth is because it’s freaking COFFEE.

However, for those who can’t or choose not to have coffee, I feel you! And I’ve got your back friend. I have been making and drinking this delicious chicory dandelion root concoction for about a year and half. Basically since I learned I needed to give up the beloved coffee that I was drinking as quickly as Lorelai Gilmore. But making this into a PSL so that I didn’t feel left out and get major autumn FOMO was probably the greatest act of self love I have ever shown myself. And because I love you guys so much, of course I needed to share it with you!

Chicory Root PSL

An incredible delicious, coffee-free alternative to the traditional beloved autumn beverage. Warm, comforting spices fill this drink and make it oh-so-satisfying!

Ingredients

  • 1 Tbsp chicory root powder
  • 1 Tbsp dandelion root powder
  • 2 c hot water
  • 3 Tbsp pumpkin puree
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 3 tsp maple syrup
  • 1/4 tsp pumpkin spice
  • 1 c steamed nut milk

Instructions

  1. Heat 2 cups of filtered water to a low boil. 

  2. Remove from heat and mix dandelion and chicory root into the water.

  3. Steep for ten minutes.

  4. Strain with cheese cloth, or a coffee filter into a blender. 

  5. Add in everything but the steamed milk alternative. 

  6. Blend until smooth, only about 30 seconds. 

  7. Pour into mugs, about 3/4 the way full and top off with steamed milk. I like to whisk this together!

  8. Top with extra cinnamon if you want!
