While brainstorming every single possible way to use pumpkin, I decided to try out some pumpkin sugar cookies. I wanted something that the pumpkin spice flavors were the star, without competing with something like chocolate (let’s be honest that battle isn’t even fair. I mean I love pumpkin spice, but chocolate you guys. Chocolate!)
These cookies are delicious! They are pumpkin-spice-y, soft, perfectly sweet, and only eight ingredients. They are dairy-free, egg-free, plant-based, gluten-free, and refined sugar-free. I know you guys are going to love this recipe!
Pumpkin Sugar Cookies
Perfectly sweet, pumpkin spice sugar cookies! They are soft and basically melt in your mouth. With no gluten. dairy, eggs, or refined sugar this delicious cookies are the perfect healthier treat for fall!
- 2 c almond flour
- 1/3 c pumpkin puree
- 1/4 c maple syrup
- 4 Tbsp coconut oil
- 1 tsp pumpkin spice
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp sea salt
- 2 Tbsp coconut sugar for topping
In a stand mixer, add all ingredients except the coconut sugar (which will be used for tipping). Mix well.
Roll into tablespoon sized balls and place on a cookie sheet in the fridge for at least one hour.
Bake at 350 for 20 minutes.
