cinnamon apple crisp bars

I’m over here just doing my best to urge fall on by making all the best autumnal recipes. And these bars are IT. I am all about pumpkin, but baking with apple is another fall favorite around here.

I love the fresh but coziness baking with apples brings and everything is always so good as either a dessert or brunch item. In fact, my favorite way to enjoy these beauties is with a hot cup of tea.

I also reallllly love cinnamon, and apple cinnamon is a combination we simply can’t go without! They’re so delicious, and only 7 ingredients. You probably already have everything in your house, too!

Cinnamon Apple Crisp Bars

2 large apples (I used gala)

1 c almond flour

1/2 c gluten free oats

1/4 t sea salt

1 1/4 t cinnamon

2 T maple syrup

1/4 c + 2 T coconut oil

Preheat oven to 350

Peel and slice apples. Steam them for about 5-7 minutes until they’re soft but still firm (you don’t want them mushy!).

In a stand mixer add: almond flour, 1/4 c coconut oil, 1 T maple syrup, 1/2 t cinnamon, 1/4 t sea salt. Mix well. Press into a square baking dish. Be sure that you press it well into every corner as evenly as you can. This will help the bars hold together and cook even.

In a bowl, add oats, 2 T coconut oil, 1/4 t cinnamon and a pinch of sea salt. Mix well until a crumbly texture is achieved. This is will be the topping.

Once the apples are steamed, toss them in a bowl with remaining maple syrup and cinnamon. Pour over the crust, sprinkle on the topping and bake for 35 minutes. Cool completely before serving.

*for the sturdiest and best bars I highly recommend putting these in the fridge for at least an hour before serving!
