plant based nacho cheese sauce two ways

I remember being a kids and eating nachos ALL THE TIME. Of course, they were filled with real cheese an topped with sour cream… but this version is 1000x better! Not only is it crazy delicious, and realllllly easy, but there are veggies HIDDEN inside!

I have two different sauce options for nachos, and endless topping ideas. Both sauces are incredibly delicious on their own or together.

CLASSIC NACHO CHEESE SAUCE (healthified):

3/4 c soaked and drained cashews

2 1/2 c steamed carrots

3 T nutritional yeast

1/2 t pink salt

dash of pepper

Add everything to a blender and blend on high until smooth and creamy!

WHITE NACHO CHEESE SAUCE (healthified):

3/4 c soaked and drained cashews

2 c steamed cauliflower

3 T nutritional yeast

1/2 t pink salt

dash of pepper

Add everything into a high speed blender and blend on high until smooth and creamy.

BUILD YOUR NACHOS: 

I like to start with a layer of organic chips (of course) and then I add all of the following:

plantain chips

black beans

radish

cauli-walnut “meat”

tomatoes

salsa

lime

cilantro

avocado

I love making nachos for a fun and SUPER easy meal. They are so good and you can add so much to them!
