pumpkin chocolate chunk cookies

It’s September and I am ready to dive into all things AUTUMN!

So get ready for lots of delicious and easy fall recipes, people! I thought I would start off with a crowd favorite, COOKIES. Because, you know I love a good cookie. These are perfect for this time of year, and I hope you guys LOVE them.

These cookies are only 11 ingredients, a healthier option, gluten free, refined sugar free, but they taste AMAZING.

Pumpkin Chocolate Chunk Cookies

Dry ingredients:

2 c almond flour

1 t cinnamon

1 t pink salt

1 t pumpkin spice blend

1/2 t baking soda

1 Theo chocolate bar (I used 85% dark chocolate bar)

Wet ingredients:

1/2 c pumpkin puree

2 flax eggs

6 T coconut oil

1/4 c cashew milk (i use and love the brand MALK because it’s very clean!)

1/4 c maple syrup

Preheat over to 350 degrees.

Add all well ingredients into a stand mixer and mix well. Add in all dry expect chocolate, and mix well again. Chop the chocolate bar into chunks and add 3/4 of the bar into the cookie dough and use a spoon or silicone spatula to mix it in.

Roll into tablespoon sized balls, and sprinkle the rest of the chocolate on top of them. Bake for 20-25 minutes and enjoy!
